Fluffernutter sandwiches were one of my favorite treats growing up. Even to this day, I cannot get enough of the delicious peanut butter and marshmallow pairing–it’s that salty/sweet flavor combination, with richness from the peanut butter and sweetness from the marshmallow fluff, that always has me wanting more. Give me a spoon, a jar of peanut butter, and some marshmallow fluff and I’m a happy girl; I don’t even need the bread!
These no bake treats are a twist on the classic fluffernutter sandwich flavor combination. Like rice krispie treats, these Fluffernutter Treats use cereal and a butter/marshmallow mixture to hold everything together. But these treats have even more of a flavor punch with peanut butter cereal and a vanilla candy coating. I mixed in white chocolate chips with the cereal, but peanut butter candies or chocolate chips would also be scrumptious. These treats would also be absolutely wonderful with just the cereal and melted marshmallow mixture! Experiment with this recipe and make them a few times until you find your favorite variation; your inner child will thank you!
Fluffernutter Treats
6 heaping cups of peanut butter cereal
4 Tablespoons unsalted butter
10 ounce bag plus 1 cup of marshmallows
16 ounces of vanilla candy melts (or almond bark)
optional: chocolate chips, white chocolate chips, or peanut butter candies to mix in
Spray a 9×13 inch pan with cooking spray. Set aside.
Place the butter in a large saucepan and heat over medium heat. Once it is mostly melted, add the marshmallows. Continue to stir until the marshmallows are melted and blended into the butter. Add the peanut butter cereal (and optional candy, if using) and toss with marshmallow mixture. Carefully pour the coated cereal into the prepared pan, spreading the cereal evenly into the pan. Allow the cereal to set for at least two hours at room temperature before cutting into squares.
Line a cookie sheet with parchment paper. Melt the vanilla candy melts according to package instructions. Dip the bottom of each treat into the candy melts, making sure to evenly coat the entire side of the treat. Place the treat vanilla candy melt side up on the prepared cookie sheet. Repeat for all of the squares. Let them sit for about 15 minutes, or until set. Store at room temperature.
Makes 15 bars.
