There is nothing better than creamy, cold ice cream on a warm summer day. There is also nothing worse than heating up the oven and making your house even more unbearably hot when the temperatures are abnormally high. In the summer months, I do everything I can to avoid turning on the oven. Most of my meals are cooked on the grill or stove-top, and almost all of my desserts are some form of no-bake creation. This Zebra Ice Cream Cake is one of my all time favorite summer desserts because it only has TWO ingredients and it is one of the most delicious, yet simple recipes I make.
This recipe also gets two thumbs-up from all ages, especially kids. You can have them help you put this cake together, and even add a few special touches, like sprinkles or their favorite candy. This dessert is definitely a winner in all categories. I hope you enjoy this easy, scrumptious cake and keeping your house cool and comfortable!
Zebra Ice Cream Cake
1 package ice cream sandwiches (you’ll only use about 6-8 ice cream sandwiches)
2 8-ounce containers Cool Whip or other whipped topping, brought to room temperature
Chocolate syrup, caramel sauce, fruit, sprinkles, nuts, and/or other toppings
Choose a dish you would like to make this dessert in. (I made mine in a 5×7 inch baking dish.) You want to make sure the ice cream sandwiches fit snugly in the baking dish.
Line the baking dish with plastic wrap. This ensures easy removal once the cake is frozen. Line ice cream sandwiches on the bottom of the baking dish, making sure they fit closely together. Spread one container of whipped topping over top of the ice cream sandwiches. Add another layer of ice cream sandwiches and top those with remaining container of whipped topping. Cover the cake with plastic wrap and freeze for 3-4 hours, or overnight.
Remove the cake from the freezer and let sit for 5-10 minutes. Slice and add your favorite toppings.
Serves 6.
