Summer is the perfect time to enjoy tropical flavors, and a simple, fun way to bring those flavors home is to make homemade pineapple coconut gelatin. When I mentioned that I was making homemade pineapple coconut gelatin my mother was shocked, she didn?t even realize it was possible. That tells me a lot about how our society has moved away from simple homemade foods and towards processed, boxed items. When you see how simple homemade gelatin is, how you get to control everything from the sugar level (didn?t add an ounce), to the color (nothing artificial here), to the flavors (exotic and exciting), you are going to wonder why you didn?t start making gelatin sooner.
I opted for pineapple and coconut, but don?t limit yourself, try fresh squeezed orange juice, exotic mango and papaya, patriotic strawberry, cherry or blueberry, tangy lemon and lime. Really, the only limit is your imagination. And if you are so inclined, you can add an alcohol of your choice to make a more adult dessert. I would recommend rum with the pineapple coconut gelatin.? Matthew?s Puzzle Pineapple Coconut Gelatin
- 1 Cup pineapple juice ? room temperature
- 3 Cups pineapple juice ? for boiling
- 3 envelopes unflavored gelatin
- 1 Cup Coconut juice blend ? room temperature
- 3 Cups coconut juice blend ? for boiling
- 3 envelopes unflavored gelatin
Pour 1 Cup of pineapple juice into a large glass pan; sprinkle first 3 envelopes of unflavored gelatin over the juice. Meanwhile, bring the remaining 3 Cups of pineapple juice to boil. Pour boiling juice over gelatin and juice mixture in pan. Stir until gelatin is fully dissolved. Refrigerate until set.
Pour 1 Cup of Coconut juice blend into a large glass bowl; sprinkle first 3 envelopes of unflavored gelatin over the juice. Meanwhile, bring the remaining 3 Cups of coconut juice blend to boil. Pour boiling juice over gelatin and juice mixture in bowl. Stir until gelatin is fully dissolved. Allow mixture to cool and thicken but not set. Carefully pour coconut mixture over pineapple mixture making sure not to disturb the pineapple layer. I poured it over a wooden spoon to make sure it did not disturb the pineapple layer. Refrigerate until set.
Slice into cubes and serve.
