Healthy, filling, easy to make dishes? is what I look for in a meal so I was excited when Lucy of? Lucy Loves to Cook agreed to share with us one of her delicious dishes.? This is a one to definitely try, I hope you enjoy!
This is a dish that gets made pretty often in my house, it’s so easy to make, it’s healthy and everyone loves it. It takes about an hour but you don’t need to spend that whole hour in the kitchen, you can go away and leave it in the oven without having to worry! Perfect for a midweek meal that will please everyone.
Ingredients – Serves 2 (can easily be doubled)
3 large potatoes, chopped into chunks
2 large chicken breasts
2 Peppers, cut into chunks
4 Tomatoes, sliced in half
2 Garlic Cloves, crushed
200ml Hot Chicken Stock
1 Tablespoon of Olive Oil
1 Tablespoon of Oregano
A Large Pinch of Chilli Flakes – Depending on how hot you like it
Salt and pepper
Method – Takes about an hour
1. Preheat the oven to 225c. Parboil the potatoes until they are starting to get soft but not so they are falling apart. While the potatoes are cooking arrange the chicken, peppers, tomatoes and garlic in an ovenproof dish.
2. Once the potatoes are cooked add them to the dish, pour over the stock, olive oil, oregano, chilli flakes and salt and pepper. Stir everything to combine. Pop the dish in the oven and leave it to cook for around 35 minutes checking every 15 minutes and stirring if necessary.
5. Serve! Making sure to get some of all the ingredients and the juice! Oh and make sure you discard the garlic.
