I am a massive fan of potatoes, I could eat them everyday for every meal and not get bored, yes I love them that much. I’ve made these potatoes a few times recently, we have some rosemary growing in the garden so they’re great to make when I’m a bit low on seasoning! They’re lovely with lamb, a traditional roast chicken dinner or on their own when you just need a carb hit! One portion of these has 211 calories, so they’re diet friendly too, what more could a girl ask for!
Ingredients – Serves 2
500g New Potatoes, I used Jersey Royals
2 Teaspoons Olive Oil
2 Sprigs of Fresh Rosemary (I used one because it was huge!)
2 Garlic Cloves, crushed
Salt and Pepper, to season
Method – Takes 50 Minutes
1. Preheat the oven to 250c, chop the potatoes into chunks and parboil until just soft. Once the potatoes are cooked, drain and bash them about a bit in the dish so the edges go soft and fluffy.
2. Add the potatoes to a ovenproof dish, add the rosemary and garlic, coat the potatoes in the olive oil and season liberally with salt and pepper. Roast in the hot oven for 35-40 minutes or until they turn golden brown and crispy, serve!
