Tilapia with Spinach

I absolutely love spinach, but my husband isn’t that big of a fan. I mean, he likes spinach in salads, but only from time to time. A while back, I decided to try something different. I threw some spinach in a baking dish, topped it with tilapia and some spices and BAM! It came out so great and my husband actually asked me to make his tilapia like that from now on. It must have been good, right?! Give it a try!

Ingredients:

  • Fresh spinach (must be fresh)
  • Tilapia
  • Spices of your choice
  • Broth

So this recipe seems vague and that’s because it is so customizable. I have tried it with lemon pepper seasoning, a bunch of garlic, sauteed mushrooms and onions and a mass mix of herbs. Everytime, my husband says it’s wonderful! So use the spices you want, use tomatoes or mushrooms or onions if you want… make it your own! As far as the broth goes, I use less than 1/4 cup for 2 tilapia fillets. Don’t leave it out, or the spinach gets a little dry on the bottom and edges.

This is so simple, it’s great. Take out a baking dish, I use a 9×9 one for 2 fillets, and coat it lightly with cooking spray. All I do is take handfuls of fresh spinach and keep tossin it in my baking dish til it’s full. My husband liked it so much, he asked for more, so sometimes I will steam it a bit so I can fit more spinach in the dish. It’s up to you!

Now you want to pour the broth over the spinach. You really don’t need too much – I think 1/4 cup is more than enough for my baking dish so you can use that as a guide (most of the time I just eyeball it). Next, I add the tilapia fillets. For this picture, I used some Mrs. Dash seasoning mix, as well as dried onions and fresh chopped tomtoes on one.

Cover this with foil and bake @ 350 for about 20 minutes. This time really depends on the size of your tilapia fillets. You can actually make this with the fillets frozen (that’s what I normally do because I am a slacker!) and if you do that, it takes about 30 minutes or so. You will know the fish is done when it flakes.

Serve each piece of fish with a big spoonful of spinach. Ta-da! This dish is simple and delicious. I was seriously shocked that my husband liked it so much (though he will only eat the cooked spinach when it is served this way!). I hope you try this out, it’s wonderful!
