Tuna Un-Casserole

You know, I’ve never actually made a tuna casserole. I sort of always just throw something together that can be made on the stove. For once, I wrote down the ingredients I used so everyone can benefit! I will say that the reason I love this recipe so much is because it takes down the tuna flavor. It makes it much milder and I think that’s what makes it so delicious. My husband absolutely loves this tuna dish and I think you guys will too – try it out!

Ingredients:

  • Penne Pasta
  • Olive Oil
  • Garlic, minced (I use a bunch, but 4 cloves is probably good)
  • 1 small onion, diced
  • 12 ounces of tuna, drained
  • ½ cup sun-dried tomatoes, sliced
  • 1 cup dry white wine
  • 1 cup heavy cream
  • 1/3 cup peas
  • Parmesan cheese, grated
  • Fresh Basil

Cook a box of pasta as directed on the box. While it is cooking, heat the oil (a few tablespoons) in a deep skillet or medium sized pot over medium heat. Saute the garlic and onions until they are tender (4 minutes or so). Add the tuna and sun-dried tomatoes. Mix everything together and let cook for just a minute or two, then add the wine. You want it to cook down for another minute or two and then add the cream. You can season it with pepper, but I don’t recommend salt (you can always add salt at the end). Let the mixture heat up and then add your peas and pasta. You can add as much or as little parmesan as you want – I added about a cup to my pasta.

 

Serve this delicious pasta dish with some torn fresh basil leaves on top. It’s very tasty and very simple to throw together.

    Hope you like it! We make it pretty often because of how easy it is. My husband seriously loves it and if I go a couple weeks without making it, he will ask for it :P
