I found this recipe once upon a time in a store on the top of a baking pan. Maybe I broke a few rules, but the pan looked pretty lame… the recipe on the other hand… it looked awesome! I remember there was this great picture that just made me drool. So instead of buying this useless pan, I just copied down the recipe in the store. This was probably a couple of years ago so don’t ask me where or anything. I will say that this cake was so good, I wish I had bought the pan just to give them a money highfive. It’s very simple and light, but totally delicious. I think this would be a great cake to bring to a party, shower or BBQ. It’s also great because I think you could use any type of berries you wanted (or whatever berries looked the best in the store).
Ingredients:
- 4 egg whites
- 1 cup butter, softened
- 2 cups + 2 tablespoons sugar
- 2/3 cup milk
- 2 teaspoons baking powder
- 1 teaspoon vanilla extract
- 3 cups flour
- ½ teaspoon salt
- 4 cups berries
- ¼ cup chopped nuts
I didn’t use the nuts, I’m not really a big fan of them in my desserts. Also, feel free to use a mix of berries. I only used strawberries because it’s what I had on hand when I took these pictures. I have made it with blueberries and raspberries before, as well as a combination. So really, anything goes. I think you could use more than 4 cups as well. If you like your cake with extra berries, add more. If you’d like it more cakey, leave it at 4 cups.
Preheat your oven to 350° and spray a 13×9 pan with cooking spray. In a medium bowl, beat your egg whites until stiff peaks form. If you have never done this before, I highly recommend not doing it by hand. It takes some time. I did it by hand the first time and man, I regretted it. My arm was so sore! If you decide to do it by hand, hats off to you! Now, in a large bowl, beat your butter and 2 cups of sugar til it’s fluffy.
Add in the milk, baking powder and vanilla. Mix this all together well and then add in the flour about 1 cup at a time. When everything is mixed together well, fold in your egg whites. Spread half the batter in your pan and sprinkle with 2 cups of your berries. Top that with the remaining batter and then sprinkle the rest of your berries on top. If you are using nuts, sprinkle them on as well, along with the 2 tablespoons sugar.
Bake this delicious cake for 50 to 55 minutes, or until the top starts to turn slightly brown.
This berry cake is so good! The sugar you sprinkle on at the end gives the top a nice little crust, which is so perfect. Not to mention, this dessert is pretty light, which is great for this summer heat. It’s tough to eat something too sugary or heavy when it’s so hot outside, so this is a wonderful treat. Give it a try!

My grandma always makes this with green apple slices and calls it “Charlotka” so I was eager to try a different take with berries.
I used blackberries&strawberries and substituted butter with oil & it came out great!
